Martine came to town do da do da…
For her first night we did the ever so touristy trip down to the Quay for dips, coopers pale ale and a little stupidity. Gruesome stories and jokes were a plenty. Of course, it would have been even touristier if we had done the opera house for chardonnay… but we aren’t like that.

This dip is basically hummus with a little extra. I’ve done things like add orange flavour – and of course chopped parsley and olives is also nice.

Ingredients:
1 400g can of chickpeas
2 tablespoons of tahini
1 clove of garlic chopped
1 ½ teaspoons of cumin seeds
1 ½ teaspoons of coriander seeds
1 handful of baby spinach
1 handful of parsley
Hummus with a green twist: This brand of Totally Martine Dip has a Moroccan feel.
1. Toast cumin and coriander seeds in a dry pan. This will release their flavor and make them easier to crush.
2. Add all ingredients to a bowl and blend.
3. Consider decorating with a sprinkle of sesame seeds on top or garnish with parsley…
