Tofu San Choy Bau

I can’t really remember how I made this tofu san choy bau… It was just before midnight disco hosted by Miss Martine . Midnight disco is a very stylish event full of retro greats featuring youtube.

The event basically involved Martine taking over my computer and attempting to out do each song with an even sadder musical event in history. She will be upset that I have said that – but hey, she is no longer here to punch me. Feature artist of the night would have most certainly been Klaus Nomi… very interesting chappy.

Remember – the Iceberg lettuce is not only relegated to 1980 suburban life but is also the best lettuce for Vietnamese and Thai dishes with its watery composure.
Goes down a treat.

The basic notion of this dish is to wrap your mince (ordinarily chicken or pork) up in a lettuce leaf with mint, carrot and bean shoots to serve with dipping sauce. It’s a fun dish because you make your own but can get a little messy. Of course the mince needs to be fired up with ginger, garlic shallots, soy and possibly a little five spice.
