Orange and Rocket Salad
Today my Australia day lamb was inspired by dinner last night at Mint Café on Crown Street with Ellie and Keita. It is an amazing place to eat.
The stakes have been spiced up a bit and pan fried. Served with lovely crispy circles of sweet potato.

Ingredients:
A large handful of rocket
One orange segmented
A few rings of finely sliced red onion
30 or so flat parsley leaves
A teaspoon of lemon juice
A tablespoon of olive oil
Flaked almonds
1. combine rocket, parsley, onion, almonds, lemon and olive oil in a bowl and season with salt and pepper.
2. Segment an orange combine and serve.
