Warm red lentils with cumin

I’m very impressed by how quick, easy and yummy this dish is. I made it as the entrée for dinner with Ann on Good Friday with yogurt cheese and then served the leftovers to Roxanne on Easter Sunday with feta… lovely.

Red Lentil Salad

Serves: 3-4 (small serves!)
Prep: 2 min
Cook time: 20 min

Ingredients:
A good ol’ lug of olive oil (1 tablespoon)
1 tablespoon of cumin seeds
1 large clove of garlic chopped
1 tablespoon of grated/ finely chopped ginger
1 ½ cups of red lentils
750ml of vegetable stock (or three cups – ie, double the amount of lentils)
1 large handful of freshly chopped parsley or a herb of your choice
1 lemon
Feta / yogurt cheese to serve
Rocket or baby spinach to serve

This reheats really well – just consider adding a little extra water. :]

1. Over a medium heat, warm the oil – add cumin, garlic and ginger and cook for two minutes or so, add the lentils and stir through to coat.
2. Add stock and cook until absorbed (around 20 minutes) stirring occasionally.
3. Serve with lemon, rocket and some yogurt cheese.

Rox has requested that I rate my food according to difficulty… in which case this would be super easy. But I like her idea and I’m going to roll something out soon. :] xx

    Guess what… I’m feeling unwell and so not like cooking, but *because* I’m feeling unwell I knew I needed to. So I look in the fridge, hm, salad stuff… cupboard, tuna, did that yesterday… then I recall that delicious apparantly easy lentil thing I ate at yours, I got on this here chewlog, clicked on vego then searched lentil, and lo & behold this dish has my name on it!! Needless to say I’ll be eating my own double garlic & ginger without cumin (coz i don’t have it) version in 20 mins! It’s on the stove ‘absorbing’ away! so cool.
    p.s. whilst looking for the cumin, I accidentally tipped out some other, unnamed spice, and it smelt appropriate so waste not want not, I chucked it in! Who knows, it could be cumin!

    Ah! Great. So… tell me what is the mysterious spice that leaped out of the cupboard at you? Once you ate it – did you know what it was? It’s a good one because you can change it.
