Fresh Rice Paper
Serves: 2
Cook time: 25 min
Ingredients:
1 cup of white rice
Pinch of salt
1 bamboo or kebab stick
1. Soak white rice in fresh water over night and wash rice several times to ensure all cloudy water has washed away. Mix with 2 cups of fresh water and add a pinch of salt.
2. Place in a blender and blend well. Leave aside to sit for one hour.
3. Get a large pot and cover with a thin sheet of white cotton fastening tightly with elastic.
4. Ladle a spoon full of the mixture onto the cotton and steam for one minute with the lid on.
5. Use the bamboo or kebab stick to remove the rice paper and flip to lay down wet side up.
6. Place filling on sheet and roll up.

I tried this at home, but we couldn’t get the paper off the fabric without breaking apart. Any tips? I’ve made them in vietnam no problems, but cannot seem to replicate it….
