Lemon and Ginger Chicken

This is very simple. Overall this feast took me around 3 hours to cook and I felt that whatever I chose to bake would save time where as the other dishes such as rice paper rolls and salad would take much longer. When preparing a feast it is important to balance this out too.

The unofficial name given at the table is: Moist Lemon Chicken with Love. Sort of naughty sort of nice. :]

Lemon Chicken

Serves: 4
Prep time: 10min
Cook time: 45min

Ingredients:
4 chicken thigh with skin bones removed
2 garlic cloves
An inch of garlic chopped.
One lemon
Olive oil

1. oil a pan and lay out the thighs flat.
2. Over the skin sprinkle the garlic and ginger before laying out a sliced lemon.
3. Cook in the oven for 40 minutes in a moderate oven (180degrees) or until golden on top.
